Cheese Biscuits

People all over the world love biscuits but sometimes the context can matter because the word “biscuit" can mean different things in different places. In Europe when someone asks for a biscuit they generally mean a cookie - a hard biscuit. In the US, particularly in Southern locales, a biscuit is a softer confection - something that goes much better with Southern style gravy. In Montgomery, Alabama there is even a minor league baseball team called the Montgomery Biscuits. Their mascot is a big, seven-foot creature named Big Mo that looks something like a dopey elephant (think Dumbo in a baseball uniform) but they call him “Montgomery’s biscuit lovin’ beast”. Well if you have any biscuit lovin’ beasts in your family we have a recipe you may find useful - a cheese biscuit that will be a home run every time.
So let’s get on with the cooking…
Ingredients:
1 1/2 c (228-230g) all purpose flour
1 tbsp (15 g) baking powder
1/2 tsp (2 g) baking soda
1/2 tsp (salt)
6 tbsp (85 g) unsalted butter, chilled, cut into very small pieces
3 1/2 oz (100 g) cheese (cheddar cheese, American cheese, Gruyere etc.)
1/2 c plus 1 tbsp buttermilk, shaken
Optional ingredients: Bacon (27 g) - cook the bacon until crisp and cut into small pieces, add with cheese. Sausage (Polish, Italian, Breakfast sausage) - fry the sausage, cut into small pieces, add with cheese. You can use vegetables, (peppers, mushrooms, etc.) cut the vegetables into small pieces, steam or cook, or fry, just make sure they are small pieces, add with cheese.
Preheat the oven to 425 F, bake biscuits for 15 to 20 minutes or until golden brown. The recipe will yield around 8 biscuits
Place all the dry ingredients in a food processor equipped with the metal blade. Pulse to mix the ingredients.
Add the butter, pulse until mixture resembles corn meal texture.
Place the mixture in the medium size bowl. Add the buttermilk, mix just enough to incorporate all the ingredient. Do not over-mix.
Add the cheese and mix lightly. Do not over-mix.
Using a large ice cream scoop or something similar in size place the mixture onto the prepared cookie sheet. If needed place the mixture in your palm and lightly squeeze and than place onto the prepared sheet.
Bake at 425 F for 15 to 20 minutes or until golden brown.
Best when served warm but it's delicious room temperature as well!
