Today the air outside is very crisp, perfect for apple picking. The first thing that comes to our minds is an apple pie.  Clare makes a delicious apple pie but this season we decided to try something different. You see I love tarts. I wanted to try an apple tart. So I went on a search, I tried different recipes, they were good but I wanted a tart that was buttery, but no flour taste and yet light. After experimenting I came up with just what I was looking for.  Clare was my tester, and after few tries, I nailed the recipe.  We’re going to share this recipe with you. It’s delicious, the pastry is buttery, light in flavor but the best part it’s easy to make.

With the holidays coming up it’s sure to be a big hit at any gathering. So this Thanksgiving instead of or in addition to the traditional apple pie, try the Apple Tart. To make the tart pastry all you need is 5 ingredients and it’s made on top of the stove. Then you spread the dough in the tart pastry pan, top it with apples and sugar, bake it, glaze it, and enjoy it.

To make the apple tart you will need the ingredients (listed below), and one 9 inch tart pastry pan (with removable bottom).  You can use the round, square or miniature ones, or if you don’t have a tart pan you can use a spring cake form.  Also you will need one small and one medium size pots and a wooden spoon. A wooden spoon is best for mixing these ingredients. You’re going bake the tart in the preheated oven at 400 F for 35 to 40 minutes until medium brown.

Prep time: about 20 minutes
Bake time: 40 minutes
Glazing: 5 minutes
Total time about 1 hr 5 min

Ingredients for pastry tart:
1 1/2 c (240g) of all purpose flour
1 Tbsp of sugar
3 Tbsp of water
1/2 of salt
12 Tbsp (168 g) of unsalted butter

Ingredients for filing:
5 (420 g) green apples (estimate), peeled, sliced
1/2 c (100 g) of sugar

Ingredients for glaze:
1/3 c of apricot jelly
1 Tbsp of rum or vodka

To prepare the pastry, in a medium pot combine sugar, water, salt, and butter, Over low to medium heat melt the butter and bring it to a boil, turn off the heat. 





Add the flour and with the wooden spoon, quickly mix all ingredients until they pull away from the sides of the bowl and form a ball.


Place the dough in the tart pan, using either a wooden spoon or fingertips press the dough evenly over the bottom and up the sides of the pan, trim off any excess dough and place the tart pan in the refrigerator.







Next peel the apples, either using a slicer or a knife, slice or cut the apples into 1/8 thick slices. In a large bowl combine the apple slices and sugar, mix. In this recipe we are using green apples but you can use any apples you like, just remember if the apples are on the sweet side you need to adjust the sugar, use a little less. Then take the tart pastry out of the refrigerator and start laying the apples,  starting with the outer edge and working your way to the center, overlapping the slices.









Bake the tart in the preheated oven for 35 to 40 minutes until golden to medium brown. While the tart is baking prepare the glaze. In a small pot place the apricot jelly and rum, heat until the jelly is syrupy. Once the tart is baked, using a pastry brush, coat the apples with apricot jelly with rum. Serve warm or at room temperature by itself, or with whip cream or vanilla ice cream.








Once baked, the tart will keep 2 to 3 days at room temperature.
