Country Biscuits

Just last week we told you about Big Mo the “biscuit lovin’ beast” from Montgomery, Alabama. Our Cheese Biscuits from last week’s blog are a perennial favorite in our house - hope you had a chance to check them out. Well Big Mo is back for another helping of biscuits. This time we’re going with a simpler, even easier variation. Just like last week’s recipe - they are soft on the inside, light crust on the outside. We use only six ingredients - flour, baking powder, baking soda, salt, butter and buttermilk. And believe me (and we’re sure Big Mo would agree) they are so good!
Ingredients:
1 1/2 c (228-230g) all purpose flour
1 tbsp (13-15 g) baking powder
1/2 tsp (2 g) baking soda
1/2 tsp (salt)
8 tbsp (113 g) unsalted butter, chilled, cut into very small pieces
1 c plus 2 tablespoons buttermilk, shaken (if you do not have buttermilk, you can use whole milk)
Prepare one cookie sheet lined with parchment paper. Preheat the oven to 400 F, bake the biscuits for 20 minutes or until golden brown. The recipe will yield 6 or 8 nice size biscuits or whatever your size preference is, in other words you can make these bite size.
Place all the dry ingredients in a food processor equipped with the metal blade. Pulse to mix the ingredients.
Add the butter, pulse until mixture resembles corn meal texture.
Place the mixture in a medium size bowl. Add the buttermilk.
With a wooden spoon mix until the ingredients are incorporated. The dough will be sticky.
Using a large ice cream scoop, scoop the dough onto a baking sheet lined with parchment paper.
Bake the biscuits at 400F for 20 minutes or until golden brown.
Biscuits can be served for:
breakfast - warm with butter or jam, pair it with eggs and bacon or sausage
lunch - with soup, or as a sandwitch
dinner - with gravy or instead of dinner rolls
