Chocolate Lava Cookies

Chocolate, who doesn’t like chocolate? It comes in many forms - candy, cakes, cookies, drinks, etc… Kids and adults alike look forward to the holidays like Halloween - oh, all that candy. During Christmas season Clare and I think of our Edible Chocolate Tree - my it’s good. At Easter we think of our Chocolate Birds Nest - it’s so cute. We especially love Valentines Day - what comes to mind on this romantic occasion are dark, rich chocolate cookies, like these Chocolate Lava Cookies. They are sinfully delicious, very inviting and very versatile. Pair them with Champagne (and your special someone) and you have a perfect Valentines dessert or pair it with tea for a special treat all for yourself.
They are easy to make and very convenient - you can make them days in advance - seal them to keep them fresh, then enjoy them either at room temperature or heated in the microwave oven.

So, let’s get on with the cooking…
Ingredients:
1 1/2 cups (8 oz )(230 g) all purpose unbleached flour, pre-sifted *
1/2 cup plus 1 tablespoon (2 1/4 oz)(65 g) unsweetened cocoa *
17 tablespoons (8 1/8 oz )(233 g) unsalted butter, room temperature
1 cup (7 3/4 oz )(220 g) sugar
3 large egg yolks
1 tablespoon vanilla
1 cup bittersweet, semi-sweet or milk chocolate chips **
* Whenever possible weigh the dry ingredients, it will assure the recipe will be as good as it was intended by the creators.
** Milk chocolate contains more milk, the chocolate has a smoother flavor and it melts easier than semi-sweet or bittersweet chocolate.
Bake at 350 F for 10 minutes. The recipe will yield approximately 40 to 45 cookies.
You will need 3 or 4 cookie sheets lined with parchment paper.
Step 1:
In a large bowl combine butter and sugar, using a mixer set on medium to high, mix until smooth and creamy. Lower the speed to medium low and add egg yolks, vanilla, cocoa and flour (you can combine the cocoa and flour ahead of time). Mix until all ingredients are well blended. The batter will have a fudge texture.
Step 2:
Using a mini ice cream scoop, scoop the dough,
press 4 chocolate chips (or a few more) into the dough,
scoop more dough on top, using your fingers cover the chips.
Step 3:
Place the cookie onto the prepared baking sheet. Repeat the process until the dough is used up.
Bake cookies in the preheated oven for approximately 10 minutes.Once the cookies are baked, let them cool for approximately 5 minutes, sprinkle with confectioners sugar.
