Polish Cabbage and Noodles

Polish Cabbage and Noodles, known as Kluski z Kapusta in Polish, is often referred to as comfort food. In other words, you feel good eating it on cold winter days.  Also it's very versatile - you can serve it by itself or add various ingredients such as wild mushrooms, bacon or kielbasa as just a few examples.  It's easy to make, tastes delicious and it's great if you are on a budget.  Feel free to experiment with different cabbages like green cabbage or savoy cabbage. For a family dinner you can pair it with chicken, pork or even lamb.  For a romantic dinner pair it with rustic bread, your favorite bottle of wine and that special someone.

So let's get on with the cooking...

Prep Time: 20 minutes
Cook Time: 40 to 55 minutes
Total Time: 1 hr  to 1 hr 15 min


Ingredients:

1 medium cabbage, approximately 8 cups, chopped
1 large onion, approximately 2 cups, coarsely chopped
4 tablespoons unsalted butter
1/4 cup oil 
1 teaspoon salt
1-12oz bag extra wide egg noodles
freshly ground pepper

Optional Ingredients:  wild mushrooms, bacon, Polish sausage, plums, etc.


Step 1:
Cook noodles according to the instructions on the package. Drain, toss the noodles with 1 tablespoon of oil to prevent them from sticking (or just before you use the noodles rinse them under hot water), and set aside. Note; you can cook noodles any time before step 5.






Step 2:
Chop cabbage into small pieces, set aside. Coarsely chop the onion, set aside.







Step 3:

In a large pot over medium heat, melt the butter with the oil. Add the onion, cover and cook until translucent, approximately 10 minutes.







Step 4:
Add salt, cabbage, stir, cover and over low to medium heat cook until cabbage is soft, approximately 30 minutes, stir frequently. Note; the time it takes to cook the cabbage will depend on how you chop the cabbage.






Step 5:
Once the cabbage is soft, add the cooked noodles, and freshly ground pepper. Cover the pot and simmer for 5 to 10  minutes until heated through.






This dish can be served by itself or with wild mushrooms, bacon, polish sausage, roasted or grilled chicken. The possibilities are numerous.
